Blackcurrant Pie topped with Chocolate Ice Cream

Serves 8-10
Prep time 20 minutes
Cook time 40 minutes
Total time 1 hour

Ingredients:

 1 1/2 cup all-purpose flour
 1 teaspoon baking powder
 1/2 cup butter (softened)
 1/2 cup sugar
 2 egg yolks
 1 teaspoon lemon zest (granted)
 2 egg whites
 1/2 cup sugar
 2 teaspoons cornstarch
 2 cups blackcurrants (feel free to use other berries)

Directions:

Step 1: To make crust: In a mixing bowl sift flour and baking powder. Give it a mix.
Step 2: Add sugar, butter, egg yolks and lemon zest. Mix until everything is combined.
Step 3: Place and press dough into 9” springform pan, Let it cool in the fridge for 20 minutes.
Sept 4: Preheat oven to 350F. Bake crust for 25 minutes or until it has golden top.
Sept 5: While crust is baking lets make Blackcurrant Pie filling:
In a mixing bowl whisk eggs until stiff peak.
Sept 6: Slowly add sugar with cornstarch and whisk for 5 more minutes.
Sept 7: Mix in blackcurrants and spread it over warm crust. Bake for 10 more minutes or until
top turns golden color.
Sept 8: Let Blackcurrant Pie cool down. Slice and serve with chocolate or vanilla ice cream.
